Easy Biryani

Biryani is the perfect weekend comfort food. All it takes is a few ingredients you are bound to have lying around at home, and just ONE pot.

There really is nothing better than a one pot meal on a lazy Saturday afternoon!

Ingredients: ( to serve 4, but if I were you, it increase the quantity because this dish makes for great leftovers!)

1.5 cups uncooked rice

4 tomatoes

6 baby potatoes ( I used pink fir potatoes…my latest obsession) OR 2 large potatoes

1 cup cauliflower

1/5 cup frozen mixed veg

1 tsp tumeric

3 tsp crushed green chilli

2 tsp crushed ginger

1tbsp khus-khus*

2 sticks of cinnamon

1tsp cardomom

3 cloves

2-3 bay leaves

304 strands of saffron

1 tbsp milk

3 tbsp fresh cream*

1.5 tbsp ghee

2 tsp salt

a handful of cashew nuts

1 tbsp sultanas *

Simply:

Cook the rice as usual, and set aside.

Mix all the vegetables except the tomatoes and cauliflower, and microwave for 3-4 minutes till cooked.

Fry the cooked potatoes and cauliflower until golden brown.

Finely chop or puree the tomatoes and keep aside.

Heat the ghee , and fry all the spices and bay leaves for 1-2 minutes.  Fry the cashews and sultanas until golden brown. Add the tomatoes and cook on medium heat for 5 minutes. Stir in the vegetables, and allow to simmer for a few minutes.

Add the rice, and gently mix until coated with the tomato-vegetable mixture. While slowly mixing, add the saffron and cream.

Allow to cook on low heat for 5 minutes.

Garnish with fresh coriander.

Serve hot, with fresh plain yoghurt !
